
Chicken Buns - Dough

Add dry ingredients (flour, soomph, sugar, smash, milk powder, salt) in Kenwood bowl

Mix butter with milk and water, microwave to 45-50°C

Add butter/milk mixture to dry ingredients

Add egg, then yeast

Mix on speed 1 until incorporated

Knead with dough hook on speed 2/3 for 10-15 minutes

Dough should be smooth, elastic and stretchy

Grease dough with olive oil

Place in greased baking pan, cover with dishcloth

Place in oven at 40°C with container of hot water for 1½-2 hrs

Flatten dough and rest covered for 10 min before filling
