
Phirni
<p><strong>Phirni</strong> is the elegant rice pudding that has graced Indian tables for centuries. Milk is slowly simmered with rice flour, cardamom, and sugar until thick and creamy, then chilled and garnished with pistachios and almonds.</p><p><em>Traditionally served in earthen cups</em>, this silky dessert is the refined choice for special occasions</p>

Blend milk, cardamom powder, falooda powder, and klim until klim is dissolved.

To pot add: ghee, sojee, coconut, and almonds. Baste until pink.

Switch off heat and slowly add the blended milk/klim mixture.

Switch pot back on and stirring continuously, let mixture boil and thicken completely.

Remove from stove. Add in cream, condensed milk, colouring, rose syrup and essence.

Whisk slowly using a balloon whisk.

Set in pyrex bowl.

For decoration: Lightly whisk double cream with icing sugar.

Top with sliced pistachios, almonds, and chocolate curls or crushed flake.
